The tingling heat of Sichuan pepper (“ma”) and the searing heat of chili pepper (“la”) strike a superb balance, letting you fully savor the world of “mala” (numbing spice).
A guide titled “The Delicious Way to Eat at Rousokuya” is also provided, letting you add condiments placed at your table midway through the meal to vary the flavor.
